Time
2 hours, 30 minutes
Ingredients:
1 1/2 cups warm water
2 teaspoons instant yeast
1/4 cup Maple Syrup or Honey (I love the Honey taste)
3 tablespoons sunflower oil
3 3/4 to 4 cups whole wheat flour
1/2 teaspoon fine sea salt or kosher salt
Needed:
Bowls
Wooden spoon
9x5 inch bread pan
cooling rack
Instructions
In a large Bowl, add water, yeast and Honey or Syrup. Allow this to sit for 10 minutes. You should see bubbling.
In a seperate bowl, sift 3 cups flour with a fine sieve. Discard the bran that is left.
Add the oil, 3 cups of the flour, and the salt to the yeast mixture. Mix well, until a shaggy dough is formed.
Start kneading, adding flour as needed until a soft and somewhat elastic dough is formed. Form into a ball and place in an oiled bowl.
Allow to rise until double in bulk, about an hour.
Deflate dough and roll out to a 9x12 rectangle. Roll up, jelly-role style, pinching ends to seal. Place in a greased 9x5 inch pan. Allow to rise for about 30 minutes.
About 10 minutes before the baking, preheat the oven to 350 F.
Bake for 40-45 minutes, or until temperature is 190 F.
Tip bread from pan, and allow to cool before cutting.
