No Knead Bread

Instructions

  1. In a large bowl, whist the flour, yeast, and salt together
  2. Pour in the cool water and gently mix together until a shaggy dough has been created, then bring together into a ball in the bowl.
  3. Cover the dough with cling film and place in the refrigerator over night, and up to 18 hours.
  4. Preheat a baking stone (if using) in a 475 F oven. If not using a baking stone, preheat the oven before the ready to bake.
  5. Prepare a sheet tray upside-down with baking paper. Turn the dough out onto a board and cut into two pieces. Gently shape into 2 long loaves about 9x3 inches each, and place onto the baking paper. Allow the dough to rise for 45 minutes.
  6. When ready to bake, slide the loaves onto the baking stone. Place a shallow metal or cast iron baking pan in the over and quickly pour 3 cups of water into it to provide steam. Bake for 20-25 minutes. The bread should be at 190 F when ready.
  7. Allow to cool for best texture.
