Panettone

This week Big Daddy is baking up some Panettone. Panettone is a traditional Christmas bread that is moist and so delicious. You will want to make this fantastic and easy bread.

Instructions

To make the starter:

  1. Mix the flour, water and yeast in a small bowl
  2. Allow to sit on counter overnight (or at least 8 hours)

To make the dough:

  1. Add the starter, flour, water, eggs, vanilla paste, almond extract, salt, and sugar into the bowl of a stand mixer. Allow mixer to run until a soft dough comes together.
  2. Add the butter in small pieces, one piece at a time.
  3. Allow to knead for 7 to 10 minutes.
  4. Place dough in a greased bowl and allow to rise for an hour.
  5. Knead in the fruit and shape into a ball.
  6. Place dough into a ball and allow to rise for 60 minutes. At the end of the rising time,  preheat the oven to 400°.
  7. Bake bread for 10 minutes, then reduce oven temperature to 375° and bak for 25-35 minutes. If the top is getting too brown, cover top with foil.
  8. Allow to cool before slicing.
