This week Big Daddy is baking up some Panettone. Panettone is a traditional Christmas bread that is moist and so delicious. You will want to make this fantastic and easy bread.

Ingredients:
Starter
3/4 cups all-purpose flour
1/16 teaspoon yeast
1/3 cup cool water
Filling:
2 and 1/4 cups all-purpose flour
1/4 cup water at 105° F
2 large eggs at room temperature
4 tablespoons butter, softened
1/8 teaspoon almond extract
1 teaspoon vanilla paste
1 packet instant yeast
1 and 1/4 teaspoons salt
1/3 cup granulated sugar
1 and 1/2 cups fruit (raisins, mixed candied fruit, candied ginger)
Needed:
bowls
rolling pin
stand mixer
whisk
Instructions
To make the starter:
Mix the flour, water and yeast in a small bowl
Allow to sit on counter overnight (or at least 8 hours)
To make the dough:
Add the starter, flour, water, eggs, vanilla paste, almond extract, salt, and sugar into the bowl of a stand mixer. Allow mixer to run until a soft dough comes together.
Add the butter in small pieces, one piece at a time.
Allow to knead for 7 to 10 minutes.
Place dough in a greased bowl and allow to rise for an hour.
Knead in the fruit and shape into a ball.
Place dough into a ball and allow to rise for 60 minutes. At the end of the rising time, preheat the oven to 400°.
Bake bread for 10 minutes, then reduce oven temperature to 375° and bak for 25-35 minutes. If the top is getting too brown, cover top with foil.
