This week, Big Daddy Bakes Muesli Bread. This bread is soft and fluffy and studded with raisins, dates, and whole grains. It’s delicious!

Ingredients:
4 cups Bread Flour (1/2 cup reserved)
1 cup Muesli such as Bob’s Old Country Style Muesli
1/2 cup Raisins
1/4 chopped dates
2 tbs olive oil
2 tsp instant yeast
1 tbs honey
1 tsp kosher salt or sea salt

Instructions
In a large bowl, add boiling water, Muesli and fruit. Let soften until the water is at 110 F, about 20 minutes.
Add Olive Oil, honey, and salt, and mix. Add the yeast and mix.
Slowly add in the flour and mix until a shaggy dough is formed.
Tip out onto a board, and knead until smooth and elastic, about 10 minutes. Place in a bowl sprayed with oil, and allow to rise in a warm place until double in bulk.
Preheat oven to 425 F
Press out the air and roll dough into a 9 x 12 rectangle. Roll up dough jelly-roll style, being careful to not trap air. Place in a 9x5 inch pan, and allow to rise about 30 minutes.
Place in oven and bake for 35-40 minutes or until the internal temperature reaches 190 F. If the bread is browning too fast, loosely tent with a piece of aluminum foil during the last part of the baking.
