This week Big Daddy is baking up a pan of delicious Honey Buns. Soft, fluffy, and oh-so-sweet. So much better than those sold in the market.

Ingredients:
Dough:
1/3 cup milk (Whole or Buttermilk)
1/3 cup butter
2 tablespoons honey
3 1/2 teaspoons instant yeast
3/4 cup water at 105 F
3 cups all-purpose flour
1/2 teaspoon salt
Filling:
1/4 cup brown sugar
1/4 sugar
1 teaspoon cinnamon
1/4 cup butter, softened to room temperature
Icing:
1 tablespoon butter, melted
1 cup powdered (icing) sugar
1 tablespoon honey
Milk as needed to make smooth, around 2 tablespoons

Instructions
Grease a 9x13 inch metal baking pan.
In the microwave, heat the milk and butter. Allow mixture to cool to 105 F, about 10 minutes.
In the stand mixer bowl, add the milk mixture, the honey, yeast and warm water. Whisk until combined. If you are using active dried yeast, allow to sit for a few minutes to insure the yeast is alive.
Add 2 cups of the flour and mix on low speed until combined. Slowly add flour until the dough cleans the side of the bowl.
Knead the dough for 2 more minutes with the speed on medium. The dough should be elastic and slightly sticky.
Place the dough in a greased bowl and allow to rise for 10 minutes.
Prepare the filling: Mix Brown sugar, sugar, cinnamon and butter until they are well combined.
Turn the risen dough onto a floured board and roll into a 12x16-inch rectangle. Spread the filling evenly over the dough, and then roll up lengthwise jelly-roll style. Pinch seams together to seal.
Cut into 8 pieces (12 if you wish them to be smaller) and place in the pan.
Allow to rise for 15 minutes. Preheat the oven to 350 F
Bake for 20-30 minutes. Rolls should be golden brown. While the rolls are baking, combine the powdered sugar, honey, and butter together. Using a whisk, mix until a smooth glaze is formed, using some milk to thin the mixture.
